some touch screens work with what is called resistive touch, in which two membranes are pushed together and complete a circuit (or something to that effect). the ds, 3ds, and Wii U all used this approach and it's why you can use anything on those screens.
the switch, as well as most modern devices, use capacitive touch, which uses the electrical capacitance of your hands. it's why only your finger works on it, and water, which is similarly capacitive to the human hand iirc, makes them go berserk.
you specifically need a capacitive stylus, which recreates the capacitance of a finger, to use on switch
