Just Switch (for the most part) besides older systems (3ds, gamecube, ps3, etc.). I was gifted a series S which I've replayed a bit of Yakuza 0 recently on. No game pass. I don't see the point. Wouldn’t inventory build up and production start way in advance? Can they really stop these processes that have many outside companies involved willy nilly just because a Mario or whatever isn’t ready?

Keep in mind that this sort of tactic would likely meet only certain sorts of markets (like Famiboards and those more likely to be interested in the new hardware to start with). It's the sort of thing that would likely be overlooked by general markets, and also requires those markets to notice enough of a difference for it to matter. Besides, if someone just wants to play their old Switch games, why would they bother to shell out large sums of additional money for it? Remember if Switch 2 is truly backwards compatible, there's no reason to "hold for cross gen" because everything is cross gen. Sony didn't hold back The Last of Us Part II. The game has also already been announced for Switch, unlike say the next 3D Mario. This isn't a Wii U/BotW situation where you have to sell two different games for cross gen.

Same thing happened with the 3DS (planned for holiday 2010, delayed to early-spring 2011), Switch 1 (planned for holiday 2016, delayed to March 2017), and now Switch 2 just recently, that's 3/4 of their most recent systems.
It goes way back to the 80s really, the Super NES/Super Famicom was delayed from 1989 to 1990 and took until 1991 to come to North America (imagine waiting for that). Super NES CD-ROM was delayed multiple times and then just cancelled, the N64 was delayed multiple times, 64DD delayed multiple times, etc. etc.
I think they will release the Switch 1 version this holiday, just to have something. Even if it was originally planned as cross gen.Nintendo said Metroid Prime 4 coming to Switch when it announced, so it must have switch version. But it doesn't mean it is switch exclusive. I honestly can't think of many more options either, since 3D Zelda and Monolithsoft are likely a while away. 3D Mario would be a cool game but idk if it would be a great technical showcase (willing to be wrong on that though!).

Just occured to me that a big reason this story probably leaked so quickly and easily (as in from seemingly so many AAA publishers) is because the third parties that leaked this story are obviously pissed off about it.
