Why is everything you collect the color yellow in a mascot game

Mario gets coins and stars

Sonic gets rings

Pac-Man eats yellow dots and big dots (but sometimes also fruit)

DK gets bananas and big bananas

Banjo and Kazooie get puzzle pieces and musical notes

All of those things are yellow or "gold"

My fellow game design experts of famiboards, tell me why this is?
 
Gold should be obvious enough; it's shiny and "valuable", simple colour association for "important thing to collect". Additionally there aren't a ton of potential settings that are yellow, so it easily contrasts in most scenarios.

Yellow is a color that stands out to the human eye, second only to red.

This is also why in many countries the most important traffic warning signs and lights are in the red-->orange-->yellow range of the color spectrum.

But I guess it's generally a color that entices the player.. it needs to have a satisfying pickup sound effect to go along too!
 
As others said.. yellow/gold looking is treasure. It's also easy on the eyes to look at in terms of affecting a players emotions, and easy to spot in places that aren't yellow (green, brown, blue, black backgrounds, etc)
