I'd be pretty disappointed if studios like Supergiant and Sabotage that have seen success with their own IP worked on Nintendo franchises. I'd rather see more original stuff from them, it's not like there aren't other developers that Nintendo could hire instead.

Oh, only read the OP but the wording doesn't imply if the Nintendo IP works will be something like Cadence of Hyrule or more like Minish Cap. Supergiant for example is only 23ish people (according to Wikipedia) and they've been working on Hades and now Hades 2 exclusively for the last 6 years with no other IP in sight. I just don't see how they can do both at the same time unless their hypothetical project for Nintendo is much smaller.Who’s to say they wouldn’t do this a parallel with their own IP? It might present an opportunity for them to better fund and manage resources (ie. not every role is relevant at every phase of a project).
I agree that original works are preferred, but I also don’t want to assume they aren’t keen and don’t benefit from something like this.

Purple Lamp (new SpongeBob games, the studio is located in Austria) is the most obvious new partner.

This isn’t anything new and won’t be anything of substance imo. I think Nintendo would want to have too much control for any relevant studio to make a deal.
